Best Indian Kheer Recipe | Kheer/Pal Payasam (Indian Rice Pudding)
Kheer Recipe

Like Halloween, which is impossible without pumpkins and pumpkins, so too is it impossible to imagine an Indian celebration without Kheer. "Kheer" is a word in Hindi is a sweet dessert often used to describe Rice Pudding. There are many variations of it, however that rice pudding is the most popular. the field. Some even consider it the King of Indian sweet desserts. Any occasion, celebration, occasion, and even for day-to-day entertaining, this Rice pudding is a regular feature onto the menu. It's also referred to by the name of "Pal Payasam" in the South of India - "Pal" is a reference to milk and "Payasam" is the word used to describe Pudding.

Contrary to many of its contemporaries This is one Indian sweet that is simple and simple to make. In reality, the elegance and richness of this sweet by using a simple set of ingredients is the thing that makes it the most popularin my view. The slow cooking of rice and milk creates the delicious, rich and flavorful sauce. While it is time-consuming to prepare, there are a many quick recipes that simplify life. If you're given 20 to 30 minutes and you're looking to create this sweettreat, you can make rice in pressure cooker with milk for about 2-3 minutes (takes approximately 10 minutes in a small pressure cookers). Pour this into a second pan, add condensed dairy along with sugar, and nuts. Here's the result :)

However, try this method for at minimum one time. It's totally worth it in case you've never attempted it before. It is the most-loved pudding in my household, and in particular my dad is a huge lover of this sweet. I couldn't resist the urge to miss him when I made the pudding in my kitchen which is miles away! It can be however sweet you like. I like very mild sweetness therefore I only added 2-3 tbsp however you can increase the amount if you wish to. My recipe is not in any way different from any of the recipes on the internet however I prefer short-grained or medium grains of rice. I feel this is more suitable than Basmati rice that is called for in numerous recipes.

Ingredients for Kheer Recipe

  • 1/4 cup of short or medium Grained Rice
  • 4 cups of whole milk (go for low fat in the case of absolute necessity)
  • sugar as desired - I used 3 tablespoons ( 1/4-1/2 cup should be sufficient )
  • A pinch of saffron
  • 1/4 tsp cardamom powder
  • 1 tbsp of nuts ( I made use of almonds, pistachios, and cashews)
  • 4-5 raisins (or more if you like it)
  • 1 teaspoon Ghee (preferred higher than butter)

Method for Kheer Recipe

1. In a pan to warm the Ghee. Add the chopped nuts with the raisins. Place aside until the raisins become big and the nuts become reddish brown.

2. Within the same skillet, cook the rice for a couple of minutes on low heat.

3. Add the milk. Turn the heat up to medium-high and allow it to come to an unbeatable boil.

4. It is important to stir it regularly to ensure that the milk doesn't stay on the bottom. Pans that are non-stick work excellent to do this. Make sure that the milk doesn't get burned. Even a small amount of burning can spoil the milk. Add sugar , and give it a good stir.

5. Reduce the temperature to medium and cook until the milk is been reduced to half. Continue stirring frequently. When you know it's done, the milk has decreased and the rice is been cooked and becomes soft (not soft and mushy). The whole process takes between 20 and 30 minutes.

6. Include the remaining ingredients - cardamom, saffron and the half of the nuts that have been roasted.

7. Stir it until it is well mixed and serve using the remainder of nuts.
