The traditional Bangladeshi way of roasting chicken also known as Bangladeshi Chicken Roast as it is often referred to is a classic chicken recipe for special occasions that is distinct from chicken roast recipes found in Western countries. The traditional roast chicken is a delicious dish that has a rich flavor due to spice blends like nutmeg mace and cardamom. The majority of the time, ghee is utilized to cook the food and will always increase the taste. It's a favorite of my daughter and mine as well.

For large gatherings like weddings, the roast is cooked in clay and brick ovens, like this picture. In the home, the roast is cooked typically on the stove top, is not cooked in an oven.

Don't let the extensive list of ingredients scare you. After you have read the instructions and you'll see you can make the Bangladeshi type chicken roast requires a little some planning in advance and it's not difficult in any way. In the end, it is worth the effort to cook it. Don't be fooled!

A BANGLADESHI TYPE CHICKEN ROAST

INGREDIENTS

  • 6 pieces of medium-sized leg quarters of a chicken (about 3 pounds)
  • 1/2 cup vinegar
  • 1 tablespoon garlic paste
  • One teaspoon of ginger powder
  • 1 teaspoon salt, as per the taste
  • 2 cups ghee/butter (or oil)
  • 1 Cup beresta Divided
  • 10 golden raisins
  • 8-10 cardamom
  • 1 tablespoon poppy seeds (posto)
  • 3 cinnamon sticks, roughly 1 inch in each
  • 2 teaspoons coriander
  • 1/2 teaspoon mace
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon garlic paste
  • One tablespoon of ginger powder
  • Salt with a salty taste
Bangladeshi Chicken Roast Recipe at Home


  • 1 cup yogurt
  • 3-4 green chili
  • 1 tablespoon sugar
  • One tablespoon of lemon juice
  • 2 tablespoons kewra, or rose water
  • Almond to garnish

INSTRUCTIONS

  1. Clean and drain the chicken pieces.
  2. Make a marinade from vinegar and garlic paste ginger paste, salt and vinegar. Marinate the chicken at room temperature for thirty mins to a few hours.
  3. Remove the marinade made of vinegar.
  4. 1. Heat 1 cup of oil or ghee. Fry the chicken pieces on medium-high temperature until they are golden all over. Around 10 minutes. It may be necessary for you to cook your chicken pieces in two batches.
  5. Make a paste of the cardamom (posto) poppy seeds (posto) as well as the coriander, cinnamon stick, mace, and nutmeg into powder.
  6. Incorporate the spice powder, along with the ginger and garlic paste into the yogurt, and mix thoroughly. Set aside.
  7. After all the pieces have been cooked, add the remaining Ghee to the pan. Add 1/2 cup beresta.

  9. Add the chilies with green and sugar lemon juice, kewra/rose water. Stir the ingredients for about 2 minutes. Check the salt and adjust it according to your taste.
  10. As soon as the gravy begins to separate from the ghee. Add half of the of beresta.
  11. Cook covered for 10 to 15 minutes at a very low temperature.
  12. Sprinkle with almonds. Bonne appetite!

NOTES

I've always used ghee and butter for making Bangladeshi style chicken roasts for the purpose of giving it the best flavor.

Feel free to modify salt and green chili according to the taste.
